Overview

Vanillin, or 3-methoxy-4-hydroxybenzaldehyde (C8H8O3) is an aromatic aldehyde found in vanilla beans (a bean contains between 1.6% and 1.8%). However, vanillin is most often chemically synthesized. Vanillin is the most widely used flavoring in the world.
