Overview

Potassium phosphate is a potassium salt and an inorganic phosphate. It is used as a buffer in foodstuffs, in phosphate mixtures for phosphated meat products and in emulsifying salts for processed cheese products. Potassium diphosphate (DKP), also known as dipotassium phosphate or dibasic potassium phosphate, is a chemical compound. Its chemical formula is K2HPO4. It is composed of potassium ions (K+) and phosphate ions (HPO4 2-). Potassium diphosphate is often used as a food additive, particularly as an acidity regulator and preservative.
